Golden Restaurant Awarded the Inaugural Colorado Restaurant Association Sustainability Award

GOLDEN, CO — As a way of recognizing, promoting, and inspiring local restaurants to implement sustainable practices, the Colorado Restaurant Association (CRA) is excited to announce Woody’s Wood-Fired Pizza as the first recipient of the CRA’s Sustainability & Innovation Award, presented by WoodRiver Energy.

Founded in 1993 by legendary foodservice pro Bart Bortles, Woody’s Wood-Fired Pizza is currently run by Bart’s son, Jon Bortles, who continues his father’s legacy of being a good steward of the community and the environment. Jon, an environmental studies graduate of the University of Colorado-Boulder, has turned his passion and education into reality at Woody’s, seeking out sustainable solutions for the restaurant across all aspects of operations. From investing in solar panels to retrofitting all lighting to LED to implementing a program that composts more than 14,000 pounds of food waste each month, Woody’s has shown incredible commitment to preserving the environment. Woody’s even opened its own version of a “ghost kitchen” in 2019, made from an upcycled, solar-powered shipping container, complete with a rooftop garden.

“We’ve always tried to do well by doing good, and that looks unique to each business,” said Jon Bortles. “For us, we knew we had to tackle the inefficiencies of our 100-year-old building while also addressing the elephant in the room: food waste. As an all-you-can-eat pizza buffet, the sheer volume of food scraps that we generate is absurd. Thanks to the hard work of our staff, we now divert roughly 90% of our waste –the weight of a Boeing 737 airplane in food-waste alone – every year.”
